• Preparing and cooking specialty meals and sauces
• Supervising activities of cooks, new staff, students, and other kitchen workers and overseeing kitchen operations
• Instructing cooks in preparation, cooking, garnishing and presentation of food
• Maintaining food cost and inventory
• Planning menus, creating recipes, and determining sizes of food portions
• Estimating food requirements and costs, labour costs, and monitoring and ordering supplies
