Demi Chef

Rumah Makan Melaka is seeking an experienced and dependable Demi Chef to support our Chef de Partie in daily kitchen operations. The ideal candidate should have experience in preparing Malaysian / Malay cuisine (lauk campur) and be able to maintain food quality and consistency during busy service hours.

Key Responsibilities

• Assist the Chef de Partie in managing the hot kitchen section
• Prepare and cook Malay dishes (lauk campur) according to recipes and SOP
• Ensure taste consistency, portion control, and food presentation
• Handle daily food preparation (cutting, marinating, cooking, reheating)
• Monitor stock levels and inform supervisor on shortages
• Maintain cleanliness and hygiene standards at all times
• Ensure compliance with food safety regulations
• Support smooth kitchen operations during peak hours

Requirements

• Minimum 1–2 years of experience in Malay cuisine / lauk campur
